BUTTERY LEMON ZUCCHINI ZUPPA

You’ve never had such delicious zucchini as you’ll find in this Italian-style zuppa. The zucchini is cooked in butter and garlic until meltingly tender, and then simmered slowly with pasta and broth and sprinkled generously with Parmesan and a squeeze of fresh lemon juice. Whatever you do, don’t use those big giant baseball bat–sized zucchini that everyone is trying to pawn off on you during the summer. You need medium or small zucchini for the best flavor.

Yield: 4 servings • Freezer Friendly • Vegetarian Option

¼ cup (57 g) butter

1 large onion, diced

4 medium zucchini, unpeeled and coarsely grated

4 cloves garlic, minced

Salt and pepper, as desired

Generous pinch of crushed red pepper flakes, plus more for serving

1 tsp lemon zest

¼ cup (6 g) finely chopped fresh basil, divided

8 cups (2 L) of chicken broth, plus more if needed

8 oz (226 g) uncooked angel hair pasta (about half a standard box), broken into thirds

½ cup (50 g) freshly grated Parmesan cheese, plus more for serving

2 tbsp (30 ml) fresh lemon juice

Lemon wedges, for serving

In a large pot, melt the butter over medium heat. Add the onion, zucchini and garlic and cook, breaking up with the back of a wooden spoon occasionally, for 10 minutes, or until the zucchini is almost the consistency of a thick spread. Season with salt and pepper. Add the red pepper flakes, lemon zest, 1 tablespoon (2 g) of the basil and broth. Bring the broth to a simmer. Slowly add the pasta, maintaining a simmer for 4 minutes, or until the pasta is al dente. Add more broth slowly if the soup seems too thick. Stir in the Parmesan, remaining basil and fresh lemon juice. Season the soup to taste with salt and pepper. Ladle the soup into four bowls, and serve with lemon wedges, more Parmesan and a sprinkle of crushed red pepper flakes.

Vegetarian Option: Substitute vegetable broth for the chicken broth.
